温度管理。韭菜喜冷凉，生长适温为15―24℃，白天应适当放风。为促进萌芽，扣棚后白天室温应保持在18―25℃，萌芽后白天室温控制在17―23℃。第一刀韭菜收割前白天气温15―22℃，夜温10―12℃。以后每割一刀温度可提高2―3℃，但一般不可超过30℃。

肥水管理。韭菜生长要求较低的空气湿度和较高的土壤湿度。温室空气湿度保持在60—70%，土壤绝对含水量保持在13—15%。一般黏重土壤扣棚前浇过冬水的不再浇水。为促进下一刀韭菜生长，可在头刀收割前5―7天浇1小水，每667平方米(亩)将15―20公斤硝酸铵用水化开顺水增施，以后每刀韭菜收割前5―7天都要浇水增施肥料。

叶面施肥。生长期每隔7天喷1次磷酸二氢钾，使用浓度为300倍液；也可使用赤霉素，浓度为4万倍左右。当它长到15厘米时喷洒，每亩用量1克，加水50公斤，再加入0.5%硝酸铵效果更好。
